Pasta con Asparagi
Equipment

Ingredients
- 12 oz 340 g pasta (spaghetti or penne works well)
- 1 lb 450 g fresh asparagus, trimmed and cut into 2-inch pieces
- 3 tbsp olive oil
- 2 garlic cloves minced
- 1/4 cup grated Parmesan cheese plus more for serving
- Salt and pepper to taste
- Red pepper flakes optional, for some heat
- Fresh lemon juice optional, for brightness
- Fresh parsley or basil chopped (for garnish)
Instructions
- Step 1: Cook the Pasta
- Boil Water: In a large pot, bring salted water to a boil. The salt enhances the pasta's flavor.
- Cook Pasta: Add the pasta and cook according to package instructions until al dente. Reserve about 1 cup of pasta water, then drain the rest in a colander.
- Step 2: Prepare the Asparagus
- Blanch Asparagus: In the same pot, add the asparagus to the boiling water for about 2-3 minutes until tender but still crisp. Use a slotted spoon to transfer them to a bowl of ice water to stop the cooking process. Drain and set aside.
- Step 3: Make the Sauce
- Sauté Garlic: In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant, being careful not to burn it.
- Combine Ingredients: Add the blanched asparagus to the skillet, tossing it in the garlic oil for 1-2 minutes. If desired, add red pepper flakes for heat.
- Mix Pasta and Cheese: Add the drained pasta to the skillet, and toss everything together. If it seems dry, add a bit of the reserved pasta water until you reach the desired consistency. Stir in the Parmesan cheese, and season with salt, pepper, and a splash of fresh lemon juice for brightness.
- Step 4: Serve
- Garnish and Enjoy: Serve hot, garnished with additional Parmesan cheese and fresh herbs. Enjoy your Pasta con Asparagi!
