Spaghetti Aglio e Olio
Equipment
- Equipment Needed: Pot, frying pan, colander, spatula or tongs, measuring spoons.
Ingredients
- 200 g spaghetti or your favorite pasta
- 6-8 cloves of garlic thinly sliced
- 1/2 cup extra virgin olive oil
- 1 tsp red chili flakes adjust to taste
- Salt to taste
- Fresh parsley chopped (optional, for garnish)
- Grated Parmesan cheese optional, for serving
Instructions
- Boil the Pasta:
- In a large pot, bring salted water to a boil. Add the spaghetti and cook according to the package instructions until al dente. Stir occasionally to prevent sticking.
- Prepare the Garlic Oil:
- While the pasta cooks, heat the olive oil in a large frying pan over medium heat. Add the sliced garlic and red chili flakes. Sauté for about 2-3 minutes until the garlic turns golden. Be careful not to let it burn, as burnt garlic can taste bitter.
- Combine Pasta and Oil:
- Once the pasta is cooked, reserve about a cup of pasta water, then drain the spaghetti using a colander. Add the drained pasta to the frying pan with the garlic oil. Toss to coat the spaghetti well. If the mixture seems dry, add a bit of the reserved pasta water until you reach your desired consistency.
- Season and Serve:
- Season the pasta with salt to taste. Toss in the chopped parsley if using. Serve immediately with a sprinkle of Parmesan cheese on top, if desired.
- Variations
- Add Protein: Consider adding grilled shrimp, chicken, or sautéed mushrooms to the pasta for extra flavor and protein.
- Vegetable Boost: Toss in some sautéed spinach, broccoli, or cherry tomatoes for a colorful, nutritious twist.
- Make it Creamy: For a creamier version, add a splash of heavy cream or a dollop of mascarpone cheese.
