Frittelle di Zucchine: A Delicious Italian Zucchini Fritter Recipe

Frittelle di Zucchine
Equipment
- Mixing bowl, grater, frying pan, spatula, and paper towels
Ingredients
- 2 medium zucchinis about 500g
- 1/2 cup all-purpose flour can substitute with gluten-free flour
- 2 large eggs
- 1/4 cup grated Parmesan cheese optional; can be omitted for dairy-free
- 1/4 cup chopped fresh parsley or basil
- 2 cloves garlic minced (optional)
- Salt and pepper to taste
- Oil for frying olive oil or vegetable oil
Instructions
- Prepare the Zucchini
- Grate the Zucchini: Start by grating the zucchinis using a box grater or food processor. Use the large holes for a coarser texture.
- Drain Excess Moisture: Place the grated zucchini in a clean kitchen towel or cheesecloth, and twist it to squeeze out as much moisture as possible. This step is crucial for preventing soggy fritters.
- Make the Batter
- Mix Ingredients: In a mixing bowl, combine the drained zucchini, flour, eggs, grated Parmesan cheese (if using), parsley, garlic (if using), and salt and pepper. Stir until well combined. The batter should be thick enough to hold its shape.
- Heat the Oil
- Fry the Fritters: Heat a generous amount of oil in a frying pan over medium heat. To check if the oil is ready, drop a small amount of the batter into the oil; it should sizzle.
- Cook the Fritters: Using a spoon or cookie scoop, drop small amounts of batter into the hot oil, flattening them slightly with the back of the spoon. Cook for 3–4 minutes on each side, or until golden brown and crispy.
- Drain and Serve
- Drain Excess Oil: Once cooked, transfer the fritters to a plate lined with paper towels to absorb excess oil.
- Serve Warm: Frittelle di Zucchine can be served hot or at room temperature. They pair beautifully with a side of marinara sauce, yogurt, or a simple salad.
