Coconut Lavender Martini

- Equipment needed: Cocktail shaker, strainer, martini glass, small saucepan (for syrup)

- 2 oz coconut rum
- 1 oz coconut milk full-fat or light
- 1 oz vodka
- ½ oz lavender simple syrup store-bought or homemade – see tips
- ½ oz fresh lime juice
- Ice
- Lavender sprig or coconut flakes for garnish
Instructions
- Method:
- Prepare the Lavender Simple Syrup (if making at home):
- In a small saucepan, combine ½ cup sugar, ½ cup water, and 1 tablespoon dried lavender.
- Bring the mixture to a gentle boil, stirring until the sugar dissolves.
- Remove from heat and let it stand for 15 minutes to infuse.
- Strain the lavender flowers out, and transfer the syrup to a jar. It will keep in the fridge for up to 2 weeks.
- Shake It Up:
- In a cocktail shaker, combine coconut rum, vodka, coconut milk, lavender syrup, and lime juice.
- Add ice and shake vigorously for 15-20 seconds. From my experience, shaking it well helps incorporate the coconut milk with the other ingredients and brings out the best flavor.
- Strain and Serve:
- Strain the cocktail into a chilled martini glass.
- Garnish with a sprig of lavender or a sprinkle of toasted coconut flakes on top for an extra tropical vibe.
- Enjoy:
- Sip and savor the balance of creamy coconut and fragrant lavender with the refreshing zing of lime.
