Method:
Prepare the Lavender Simple Syrup (if making at home):
In a small saucepan, combine ½ cup sugar, ½ cup water, and 1 tablespoon dried lavender.
Bring the mixture to a gentle boil, stirring until the sugar dissolves.
Remove from heat and let it stand for 15 minutes to infuse.
Strain the lavender flowers out, and transfer the syrup to a jar. It will keep in the fridge for up to 2 weeks.
Shake It Up:
In a cocktail shaker, combine coconut rum, vodka, coconut milk, lavender syrup, and lime juice.
Add ice and shake vigorously for 15-20 seconds. From my experience, shaking it well helps incorporate the coconut milk with the other ingredients and brings out the best flavor.
Strain and Serve:
Strain the cocktail into a chilled martini glass.
Garnish with a sprig of lavender or a sprinkle of toasted coconut flakes on top for an extra tropical vibe.
