- 1 medium cucumber thinly sliced
- 1 lemon juiced (about 2 tablespoons of juice)
- 2 ounces gin or vodka optional for a non-alcoholic version, see variations
- 1 ounce simple syrup adjust to taste
- 6 ounces soda water or tonic water
- Ice cubes
- Fresh mint leaves for garnish
- For Simple Syrup:
- 1 cup sugar
- 1 cup water

- Step 1: Prepare the Simple Syrup
- Combine Water and Sugar: In a small saucepan over medium heat, combine equal parts sugar and water (1 cup each).
- Dissolve: Stir until the sugar completely dissolves, and the mixture comes to a gentle simmer. Remove from heat and let it cool.
- Store: Transfer to a glass jar and refrigerate for up to a month.
- Step 2: Muddle the Cucumber
- Slice the Cucumber: Thinly slice the cucumber and set aside a couple of slices for garnish.
- Muddle: In a cocktail shaker, add the cucumber slices (about 6–8 slices). Use a muddler or the back of a spoon to gently crush the cucumber, releasing its juices.
- Step 3: Mix the Cocktail
- Add Ingredients: To the muddled cucumber, add lemon juice, gin or vodka (if using), and simple syrup.
- Add Ice: Fill the shaker with ice cubes and shake vigorously for about 15 seconds.
- Step 4: Strain and Serve
- Strain: Using a strainer, pour the mixture into two glasses filled with ice.
- Top with Soda: Slowly pour soda water over the mixture to fill the glasses.
- Garnish: Add a slice of cucumber and a sprig of fresh mint to each glass.
- Step 5: Enjoy!
