Frozen Kiwi Mojito

- 10 fresh mint leaves plus extra for garnish
- 2 tablespoons of sugar or honey/agave syrup for a healthier option
- 1 lime juiced
- 1 cup of ice cubes
- 1/2 cup of white rum optional for a non-alcoholic version, substitute with sparkling water
- Club soda to top off

- Blend the Kiwi: In a blender, combine the chopped kiwis, mint leaves, sugar (or alternative sweetener), and lime juice. Blend until smooth.
- Add Ice and Rum: Add the ice cubes and white rum to the blender. Blend until you reach a slushy consistency. If the mixture is too thick, add a little club soda to help it blend smoothly.
- Taste and Adjust: Taste your frozen mixture. If you want it sweeter, you can add more sugar or sweetener, blending again to incorporate.
- Serve: Pour the slushy kiwi mojito into glasses. Top with a splash of club soda for fizz and garnish with mint leaves and kiwi slices.
- Enjoy: Sip and enjoy this refreshing drink!
