Ingredients
- For the Pasta
- 12 oz of pasta tagliatelle or fettuccine works best
- 2 tbsp of olive oil
- 2 cloves of garlic minced
- 1 cup of fresh or dried porcini mushrooms rehydrated if dried
- 1/2 cup of vegetable or chicken broth
- 1/2 cup of heavy cream
- Salt and pepper to taste
- 1/4 cup of grated Parmesan cheese optional
- Fresh parsley chopped, for garnish
- Substitutions
- Pasta: Use gluten-free pasta if you have dietary restrictions.
- Cream: Substitute with coconut cream or a dairy-free alternative for a vegan option.
- Parmesan: Nutritional yeast can be used for a dairy-free cheesy flavor.
Instructions
- Step 1: Cook the Pasta
- Boil Water: In a large pot, bring salted water to a boil.
- Cook Pasta: Add your chosen pasta and cook according to package instructions until al dente. This usually takes about 8-10 minutes.
- Reserve Water: Before draining, save about 1 cup of the pasta water for later use.
- Drain Pasta: Drain the pasta in a colander and set aside.
- Step 2: Prepare the Sauce
- Sauté Garlic: In a frying pan, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Add Mushrooms: If using dried porcini mushrooms, ensure they are rehydrated in warm water for about 20 minutes. Drain and chop. Add the mushrooms to the pan and cook for 3-4 minutes until they soften.
- Deglaze: Pour in the vegetable or chicken broth, stirring to deglaze the pan. Let it simmer for about 2 minutes.
- Add Cream: Stir in the heavy cream, mixing well. Allow the sauce to simmer for another 3-5 minutes until it thickens slightly.
- Season: Taste and add salt and pepper as needed.
- Step 3: Combine
- Mix Pasta and Sauce: Add the drained pasta to the sauce. If the sauce is too thick, add a little reserved pasta water to reach your desired consistency.
- Add Cheese: Stir in the grated Parmesan cheese, if using, until melted and well combined.
- Step 4: Serve
- Plate It Up: Serve the pasta hot, garnished with fresh parsley and an extra sprinkle of Parmesan if desired.
- Enjoy: Pair with a side salad or garlic bread for a complete meal.
- Variations
- Add Protein: For a heartier dish, consider adding grilled chicken, shrimp, or sautéed spinach.
