Reserve Water: Before draining, save about 1 cup of the pasta water for later use.
Drain Pasta: Drain the pasta in a colander and set aside.
Step 2: Prepare the Sauce
Sauté Garlic: In a frying pan, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
Add Mushrooms: If using dried porcini mushrooms, ensure they are rehydrated in warm water for about 20 minutes. Drain and chop. Add the mushrooms to the pan and cook for 3-4 minutes until they soften.
Deglaze: Pour in the vegetable or chicken broth, stirring to deglaze the pan. Let it simmer for about 2 minutes.
Add Cream: Stir in the heavy cream, mixing well. Allow the sauce to simmer for another 3-5 minutes until it thickens slightly.
Season: Taste and add salt and pepper as needed.
Step 3: Combine
Mix Pasta and Sauce: Add the drained pasta to the sauce. If the sauce is too thick, add a little reserved pasta water to reach your desired consistency.
Add Cheese: Stir in the grated Parmesan cheese, if using, until melted and well combined.
Step 4: Serve
Plate It Up: Serve the pasta hot, garnished with fresh parsley and an extra sprinkle of Parmesan if desired.
