  • 2 tbsp of olive oil
  • 2 cloves of garlic minced
  • 1 cup of fresh or dried porcini mushrooms rehydrated if dried
  • 1/2 cup of vegetable or chicken broth
  • 1/2 cup of heavy cream
  • Salt and pepper to taste
  • 1/4 cup of grated Parmesan cheese optional
  • Fresh parsley chopped, for garnish

Instructions
 

  • Step 1: Cook the Pasta
  • Boil Water: In a large pot, bring salted water to a boil.
  • Cook Pasta: Add your chosen pasta and cook according to package instructions until al dente. This usually takes about 8-10 minutes.
  • Reserve Water: Before draining, save about 1 cup of the pasta water for later use.
  • Drain Pasta: Drain the pasta in a colander and set aside.
  • Step 2: Prepare the Sauce
  • Sauté Garlic: In a frying pan, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  • Add Mushrooms: If using dried porcini mushrooms, ensure they are rehydrated in warm water for about 20 minutes. Drain and chop. Add the mushrooms to the pan and cook for 3-4 minutes until they soften.
  • Deglaze: Pour in the vegetable or chicken broth, stirring to deglaze the pan. Let it simmer for about 2 minutes.
  • Add Cream: Stir in the heavy cream, mixing well. Allow the sauce to simmer for another 3-5 minutes until it thickens slightly.
  • Season: Taste and add salt and pepper as needed.
  • Step 3: Combine
  • Mix Pasta and Sauce: Add the drained pasta to the sauce. If the sauce is too thick, add a little reserved pasta water to reach your desired consistency.
  • Add Cheese: Stir in the grated Parmesan cheese, if using, until melted and well combined.
  • Step 4: Serve
  • Plate It Up: Serve the pasta hot, garnished with fresh parsley and an extra sprinkle of Parmesan if desired.
  • Enjoy: Pair with a side salad or garlic bread for a complete meal.
