Ingredients
- Pasta: 12 oz 340g fettuccine or spaghetti
- Salmon: 8 oz 225g fresh or smoked salmon, cut into bite-sized pieces
- Cream: 1 cup heavy cream or half-and-half
- Garlic: 2 cloves minced
- Olive Oil: 2 tablespoons
- Parmesan Cheese: ½ cup grated plus extra for serving
- Lemon Juice: 1 tablespoon freshly squeezed
- Salt and Pepper: To taste
- Fresh Dill or Parsley: For garnish optional
Instructions
- Cook the Pasta:
- Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente (usually about 8-10 minutes).
- Reserve ½ cup of the pasta water, then drain the pasta in a colander and set aside.
- Prepare the Sauce:
- In a large skillet, heat the olive oil over medium heat.
- Add the minced garlic and sauté for about 30 seconds, or until fragrant. Be careful not to burn it!
- Add the Salmon:
- If using fresh salmon, add the pieces to the skillet and cook for about 3-4 minutes, or until it is cooked through. If using smoked salmon, just add it at this point to warm it up.
- Combine Cream and Lemon Juice:
- Pour in the heavy cream and lemon juice, stirring to combine. Let the mixture simmer for about 2-3 minutes to thicken slightly.
- Mix in the Pasta:
- Add the cooked pasta to the skillet and toss to coat it in the creamy sauce. If the sauce is too thick, add a bit of the reserved pasta water until you reach the desired consistency.
- Finish with Cheese:
- Stir in the grated Parmesan cheese and season with salt and pepper to taste. Remove from heat.
- Serve:
- Plate the pasta and garnish with fresh dill or parsley and extra Parmesan cheese if desired. Enjoy!
