Ingredients
  

  • Pasta: 12 oz 340g fettuccine or spaghetti
  • Salmon: 8 oz 225g fresh or smoked salmon, cut into bite-sized pieces
  • Cream: 1 cup heavy cream or half-and-half
  • Garlic: 2 cloves minced
  • Olive Oil: 2 tablespoons
  • Parmesan Cheese: ½ cup grated plus extra for serving
  • Lemon Juice: 1 tablespoon freshly squeezed
  • Salt and Pepper: To taste
  • Fresh Dill or Parsley: For garnish optional

Instructions
 

  • Cook the Pasta:
  • Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente (usually about 8-10 minutes).
  • Reserve ½ cup of the pasta water, then drain the pasta in a colander and set aside.
  • Prepare the Sauce:
  • In a large skillet, heat the olive oil over medium heat.
  • Add the minced garlic and sauté for about 30 seconds, or until fragrant. Be careful not to burn it!
  • Add the Salmon:
  • If using fresh salmon, add the pieces to the skillet and cook for about 3-4 minutes, or until it is cooked through. If using smoked salmon, just add it at this point to warm it up.
  • Combine Cream and Lemon Juice:
  • Pour in the heavy cream and lemon juice, stirring to combine. Let the mixture simmer for about 2-3 minutes to thicken slightly.
  • Mix in the Pasta:
  • Add the cooked pasta to the skillet and toss to coat it in the creamy sauce. If the sauce is too thick, add a bit of the reserved pasta water until you reach the desired consistency.
  • Finish with Cheese:
  • Stir in the grated Parmesan cheese and season with salt and pepper to taste. Remove from heat.
  • Serve:
  • Plate the pasta and garnish with fresh dill or parsley and extra Parmesan cheese if desired. Enjoy!
