- Pasta: 12 oz 340g fettuccine or spaghetti
- Salmon: 8 oz 225g fresh or smoked salmon, cut into bite-sized pieces
- Cream: 1 cup heavy cream or half-and-half
- Garlic: 2 cloves minced
- Olive Oil: 2 tablespoons
- Parmesan Cheese: ½ cup grated plus extra for serving
- Lemon Juice: 1 tablespoon freshly squeezed
- Salt and Pepper: To taste
- Fresh Dill or Parsley: For garnish optional
Cook the Pasta:
Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente (usually about 8-10 minutes).
Reserve ½ cup of the pasta water, then drain the pasta in a colander and set aside.
Prepare the Sauce:
In a large skillet, heat the olive oil over medium heat.
Add the minced garlic and sauté for about 30 seconds, or until fragrant. Be careful not to burn it!
Add the Salmon:
If using fresh salmon, add the pieces to the skillet and cook for about 3-4 minutes, or until it is cooked through. If using smoked salmon, just add it at this point to warm it up.
Combine Cream and Lemon Juice:
Pour in the heavy cream and lemon juice, stirring to combine. Let the mixture simmer for about 2-3 minutes to thicken slightly.
Mix in the Pasta:
Add the cooked pasta to the skillet and toss to coat it in the creamy sauce. If the sauce is too thick, add a bit of the reserved pasta water until you reach the desired consistency.
Finish with Cheese:
Stir in the grated Parmesan cheese and season with salt and pepper to taste. Remove from heat.
Serve:
Plate the pasta and garnish with fresh dill or parsley and extra Parmesan cheese if desired. Enjoy!
