- Blend:
- In a blender, combine the peach slices, grated ginger, and honey (if using). Blend until smooth. This should take about 30 seconds to a minute.
- Strain:
- Pour the peach mixture through a fine mesh strainer into a bowl or pitcher. Use a spatula to press the mixture down, extracting as much juice as possible. This step is essential for a smooth Bellini.
- Mix with Sparkling Wine:
- In a champagne flute, fill it about halfway with the peach and ginger puree. Then, gently top it off with the chilled sparkling wine or prosecco. Stir gently to combine.
- Garnish:
- Add a fresh mint leaf or a slice of peach on top for a beautiful presentation.
