  • Pour the peach mixture through a fine mesh strainer into a bowl or pitcher. Use a spatula to press the mixture down, extracting as much juice as possible. This step is essential for a smooth Bellini.
  • Mix with Sparkling Wine:
  • In a champagne flute, fill it about halfway with the peach and ginger puree. Then, gently top it off with the chilled sparkling wine or prosecco. Stir gently to combine.
