- 1 tablespoon fresh ginger peeled and grated
- 2 ounces rum white or dark, based on your preference
- 1 ounce fresh lime juice
- 1 tablespoon simple syrup adjust based on your sweetness preference
- Fresh mint leaves for garnish

- 1 cup water
- 1 cup granulated sugar

- Make the Simple Syrup:
- In a small saucepan, combine equal parts water and sugar.
- Heat over medium heat, stirring until the sugar fully dissolves.
- Once dissolved, remove from heat and let it cool. Store any leftovers in the refrigerator for future use.
- Prepare the Pineapple and Ginger:
- In a cocktail shaker, muddle the chopped pineapple and grated ginger together. This releases the flavors and juices.
- Use the muddler to press down firmly, but don’t pulverize the fruit. You want some texture!
- Mix the Cocktail:
- Add the rum, fresh lime juice, and simple syrup to the shaker.
- Fill the shaker with ice cubes and seal it tightly.
- Shake vigorously for about 15-20 seconds until the mixture is well-chilled.
- Strain and Serve:
- Using a strainer, pour the mixture into two glasses filled with ice.
- Garnish with fresh mint leaves and a slice of pineapple, if desired.
