Make the Simple Syrup:
In a small saucepan, combine equal parts water and sugar.
Heat over medium heat, stirring until the sugar fully dissolves.
Once dissolved, remove from heat and let it cool. Store any leftovers in the refrigerator for future use.
Prepare the Pineapple and Ginger:
In a cocktail shaker, muddle the chopped pineapple and grated ginger together. This releases the flavors and juices.
Use the muddler to press down firmly, but don’t pulverize the fruit. You want some texture!
Mix the Cocktail:
Add the rum, fresh lime juice, and simple syrup to the shaker.
Fill the shaker with ice cubes and seal it tightly.
Shake vigorously for about 15-20 seconds until the mixture is well-chilled.
Strain and Serve:
Using a strainer, pour the mixture into two glasses filled with ice.
Garnish with fresh mint leaves and a slice of pineapple, if desired.
