  • Fresh mint leaves for garnish

  • 1 cup granulated sugar

  • Make the Simple Syrup:
  • In a small saucepan, combine equal parts water and sugar.
  • Heat over medium heat, stirring until the sugar fully dissolves.
  • Once dissolved, remove from heat and let it cool. Store any leftovers in the refrigerator for future use.
  • Prepare the Pineapple and Ginger:
  • In a cocktail shaker, muddle the chopped pineapple and grated ginger together. This releases the flavors and juices.
  • Use the muddler to press down firmly, but don’t pulverize the fruit. You want some texture!
  • Mix the Cocktail:
  • Add the rum, fresh lime juice, and simple syrup to the shaker.
  • Fill the shaker with ice cubes and seal it tightly.
  • Shake vigorously for about 15-20 seconds until the mixture is well-chilled.
  • Strain and Serve:
  • Using a strainer, pour the mixture into two glasses filled with ice.
  • Garnish with fresh mint leaves and a slice of pineapple, if desired.
