- Combine Ingredients: In a small saucepan, combine sugar, water, and rosemary.
- Heat: Bring the mixture to a gentle simmer over medium heat, stirring until the sugar completely dissolves.
- Infuse: Once the syrup is clear, remove from heat and let it sit for about 5 minutes to allow the rosemary to infuse its flavor.
- Strain: Remove the rosemary and let the syrup cool. Store any leftover syrup in the fridge for up to a month.
- Step 2: Mix the Cocktail
- Prepare the Shaker: Fill a cocktail shaker with ice.
- Add Ingredients: Pour in the gin, freshly squeezed lemon juice, and rosemary simple syrup.
- Shake: Secure the lid on the shaker and shake vigorously for about 15-20 seconds until well chilled.
- Strain: Using a fine mesh strainer, pour the mixture into a glass filled with ice.
- Step 3: Top Off
- Add Club Soda: Top off the drink with club soda for some fizz.
- Garnish: Garnish with a slice of lemon and a sprig of rosemary for that extra touch.
