Prep the aquafaba.
Whip it up: You’ll start to notice the liquid becoming foamy after about 3-5 minutes.
Add the sugar and vanilla, whip for 5-7 minutes until you see stiff peaks forming.
Stabilize (optional): If you want your aquafaba whipped topping to hold up a bit longer (especially in warmer weather), add 1/4 teaspoon of cream of tartar and whip for an additional 2 minutes.
Serve immediately or chill.
