  • Meat Selection choose any combination:
  • 1 lb beef brisket
  • 1 lb veal shank
  • 1 lb pork shoulder
  • 1 whole chicken cut into parts
  • Vegetables:
  • 2 carrots chopped
  • 2 celery stalks chopped
  • 1 onion quartered
  • 2-3 cloves of garlic
  • 1 bay leaf
  • Fresh herbs thyme, parsley, rosemary
  • Seasoning:
  • Salt and pepper to taste
  • Optional Dipping Sauce:
  • Salsa verde or mustard

  • Step 1: Prepare the Ingredients
  • Start by gathering all your ingredients. Cut the meat into large chunks and the vegetables into manageable sizes. It’s important to have everything prepped to streamline the cooking process.
  • Step 2: Boil the Meats
  • Fill a large pot with water and add the prepared meats. Ensure the water covers the meat completely.
  • Add the chopped vegetables, garlic, bay leaf, and herbs to the pot. Season with salt and pepper.
  • Step 3: Cooking Process
  • Bring the pot to a boil over medium-high heat. Once boiling, reduce the heat to low and let it simmer.
  • Skim off any foam that rises to the surface; this helps keep the broth clear.
  • Step 4: Simmering Time
  • Allow the mixture to simmer for about 1.5 to 2 hours. The goal is to cook the meats until they are tender. Use a fork to check the tenderness.
  • Step 5: Resting the Meats
  • Once cooked, remove the meats from the pot and let them rest on a cutting board for about 30 minutes. This allows the juices to redistribute, making the meat more flavorful.
  • Step 6: Serve
  • Slice the meats into bite-sized pieces and arrange them on a serving platter.
