Coconut Oatmeal Frosting Recipe

Here's a simple recipe to get you started:

Ingredients
  

  • 1 cup shredded coconut
  • 1/2 cup finely ground oatmeal
  • 1 cup unsalted butter softened
  • 3-4 cups powdered sugar
  • 1 tsp vanilla extract
  • 2-4 tbsp milk or cream as needed for consistency

Instructions
 

  • Toast the shredded coconut and ground oatmeal in a skillet over medium heat until lightly golden.
  • Remove from heat and let cool completely.
  • In a mixing bowl, beat the softened butter until creamy.
  • Gradually add powdered sugar, one cup at a time, until fully incorporated and fluffy.
  • Mix in vanilla extract.
  • Fold in the toasted coconut and oatmeal mixture until evenly distributed.

Notes

If the frosting is too stiff, add milk or cream, one tablespoon at a time, until desired consistency is reached.
