Prepare the Dough
In a mixing bowl, combine the flour, baking powder, and salt.
Add the olive oil and mix until crumbly.
Gradually add water, mixing until the dough comes together. It should be soft but not sticky.
Knead the dough on a floured surface for about 5 minutes until smooth.
Rest the Dough
Cover the dough with a clean kitchen towel and let it rest for 30 minutes. This helps the gluten relax, making it easier to roll out.
Shape the Crescia
Divide the dough into four equal portions.
Roll out each portion on a floured surface to about 1/4-inch thick. Aim for a round or oval shape.
Cook the Crescia
Heat a skillet or griddle over medium heat. Lightly grease it with olive oil.
Place one rolled-out dough on the skillet. Cook for about 3-5 minutes until it’s golden brown, then flip and cook the other side.
Repeat with the remaining dough, adjusting the heat as necessary to prevent burning.
Add the Filling (if desired)
If you want to add fillings, sprinkle cheese and other desired ingredients on one half of the crescia before folding it over. Cook for an additional 2-3 minutes to melt the cheese.
