Ingredients
  

  • For the Dough:
  • 2 cups all-purpose flour can substitute with whole wheat flour for a healthier option
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 tablespoon olive oil
  • 3/4 cup water adjust as needed
  • For the Filling optional:
  • 1 cup shredded cheese such as mozzarella, fontina, or a dairy-free cheese
  • 1/2 cup cooked meats like prosciutto or salami or roasted vegetables for a vegetarian option
  • Fresh herbs like basil or oregano

Instructions
 

  • Prepare the Dough
  • In a mixing bowl, combine the flour, baking powder, and salt.
  • Add the olive oil and mix until crumbly.
  • Gradually add water, mixing until the dough comes together. It should be soft but not sticky.
  • Knead the dough on a floured surface for about 5 minutes until smooth.
  • Rest the Dough
  • Cover the dough with a clean kitchen towel and let it rest for 30 minutes. This helps the gluten relax, making it easier to roll out.
  • Shape the Crescia
  • Divide the dough into four equal portions.
  • Roll out each portion on a floured surface to about 1/4-inch thick. Aim for a round or oval shape.
  • Cook the Crescia
  • Heat a skillet or griddle over medium heat. Lightly grease it with olive oil.
  • Place one rolled-out dough on the skillet. Cook for about 3-5 minutes until it’s golden brown, then flip and cook the other side.
  • Repeat with the remaining dough, adjusting the heat as necessary to prevent burning.
  • Add the Filling (if desired)
  • If you want to add fillings, sprinkle cheese and other desired ingredients on one half of the crescia before folding it over. Cook for an additional 2-3 minutes to melt the cheese.
