Method
Prepare the Ginger Syrup (if making from scratch):
In a saucepan, combine the water, sugar, and sliced ginger. Bring to a boil over medium heat.
Reduce heat and simmer for about 10 minutes. Remove from heat and let it cool.
Strain the syrup into a jar and refrigerate until ready to use.
Muddle the Cucumber:
In a cocktail shaker, add the cucumber slices and muddle gently to release the juices. Don’t over-muddle; you just want to break it down a bit.
Mix the Ingredients:
Add the fresh lime juice, ginger syrup, agave syrup, and tequila to the shaker.
Fill the shaker with ice cubes and shake vigorously for about 15 seconds.
Strain and Serve:
Strain the mixture into two glasses filled with ice.
If desired, top with soda water for a refreshing fizz.
Garnish with cucumber slices or a lime wedge.
