Step 1: Prepare the Batter
In a mixing bowl, combine 1 cup of chickpea flour and 1 teaspoon of salt.
Gradually whisk in 2 cups of water until you achieve a smooth batter. Make sure there are no lumps.
Stir in 1/4 cup of olive oil.
Step 2: Let It Rest
Cover the bowl with a cloth and let the batter rest for at least 30 minutes. This resting period helps the flour absorb the water and enhances the flavor.
Step 3: Preheat the Oven
Preheat your oven to 450°F (230°C).
Place an oven-safe pan (preferably cast iron) in the oven to heat up.
Step 4: Bake the Farinata
Once the oven is hot, carefully remove the pan and drizzle a little olive oil in it. Swirl the pan to coat the bottom.
Pour the rested batter into the pan.
If desired, sprinkle fresh rosemary or other toppings on top.
Bake for about 25 minutes, or until the edges are golden and crispy.
Step 5: Serve
Remove from the oven and let it cool for a few minutes.
Cut into wedges and serve warm, either plain or with your choice of toppings.
