#Frittelle di riso

  • 1 cup of cooked rice preferably short-grain
  • 2 large eggs

  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon nutmeg optional
  • 1/4 cup fresh herbs like parsley or basil, finely chopped (optional)
  • Oil for frying olive oil or vegetable oil

Instructions
 

  • Step 1: Prepare the Mixture
  • In a mixing bowl, combine the cooked rice, eggs, grated Parmesan cheese, flour, salt, black pepper, and nutmeg (if using). Mix until all ingredients are well incorporated.
  • If you want to add some herbs, fold them into the mixture now. This adds a fresh flavor to the fritters.
  • Step 2: Let the Mixture Rest
  • Let the mixture stand for about 20 minutes. This allows the flavors to meld and the flour to absorb some moisture, making it easier to shape the fritters.
  • Step 3: Heat the Oil
  • In a frying pan, pour enough oil to cover the bottom, about 1/4 inch deep. Heat the oil over medium heat until it's hot but not smoking.
  • Step 4: Shape the Frittelle
  • Using your hands or a spoon, form small patties (about 2-3 inches in diameter) from the mixture. You can also use a small ice cream scoop for uniform sizes.
  • Step 5: Fry the Frittelle
  • Carefully place the fritters in the hot oil. Do not overcrowd the pan; fry them in batches if necessary.
  • Cook for about 3-4 minutes on each side or until they are golden brown and crispy. Use a slotted spoon to flip them gently.
  • Step 6: Drain and Serve
  • Once cooked, transfer the fritters to a plate lined with paper towels to absorb excess oil. Serve warm with your favorite dipping sauce, like marinara or aioli.
