Method
Make the Peach Puree:
If using fresh peaches, peel and chop one ripe peach. Blend it until smooth in a blender. If you prefer, you can use canned peach slices; just make sure they're packed in juice and not syrup.
Prepare the Ginger Syrup:
To make ginger syrup at home, combine equal parts water and sugar (1 cup each) in a saucepan. Add a few slices of fresh ginger and simmer on low for about 10-15 minutes until the sugar dissolves. Strain and let it cool. Store leftovers in the refrigerator for up to two weeks.
Mix the Cocktail:
In a cocktail shaker, combine gin (or vodka), lemon juice, peach puree, and ginger syrup. Fill the shaker with ice and shake vigorously for about 15 seconds until well chilled.
Strain and Serve:
Strain the mixture into a highball or Collins glass filled with ice. Top with club soda to add some fizz.
Garnish:
Garnish with fresh peach slices and a sprig of mint for a pop of color and freshness.
Variations
Non-Alcoholic Version: Substitute gin or vodka with sparkling water for a refreshing mocktail.
Flavored Gin: Use peach or ginger-flavored gin for an extra kick of flavor.
