Step 1: Make the Peach and Lavender Syrup
Combine Ingredients: In a medium saucepan, mix together the diced peaches, water, sugar, and dried lavender.
Cook: Bring the mixture to a simmer over medium heat. Stir occasionally to dissolve the sugar.
Infuse: Once the sugar has dissolved, reduce the heat and let it simmer for about 5 minutes. Remove from heat and allow the syrup to steep for another 5 minutes.
Strain: Using a fine mesh strainer, strain the mixture into a clean jar or bottle. Discard the solids (peach and lavender bits).
Step 2: Prepare the Sparkler
Mix the Cocktail: In a cocktail shaker, add 2 ounces of the peach and lavender syrup, along with ice. Shake well to chill.
Serve: Fill your glass with ice and pour the chilled mixture over the ice. Top off with sparkling water or club soda for that bubbly effect.
Garnish: Add fresh peach slices and a sprig of lavender for a beautiful presentation.
Variations
Non-Alcoholic Version: Simply omit the alcohol and enjoy the peach and lavender syrup topped with sparkling water.
Add Alcohol: For a boozy twist, add 1 ounce of vodka or gin to the shaker before mixing.
Fruit Variations: Experiment with other fruits like strawberries or raspberries for a different flavor profile.
