  • For the raspberry syrup optional:
  • 1 cup fresh or frozen raspberries
  • 1 cup water
  • 1 cup sugar

  • In a saucepan, combine raspberries, water, and sugar over medium heat.
  • Stir until the sugar dissolves and the raspberries break down, about 5-7 minutes.
  • Remove from heat and let cool. Strain through a fine mesh strainer to remove seeds and pulp. Store in the refrigerator until ready to use.
  • Step 2: Prepare the Peach Puree
  • Peel and slice the ripe peach.
  • Place the peach slices in a blender or food processor and blend until smooth.
  • Strain through a fine mesh strainer if you prefer a smoother texture.
  • Step 3: Mix the Cocktail
  • In a cocktail shaker, combine the peach puree, raspberry syrup (or muddled raspberries), and fresh lemon juice.
  • Add ice cubes to the shaker and shake vigorously for about 15 seconds to chill and combine.
  • Step 4: Serve
  • Strain the mixture into a champagne flute or cocktail glass.
  • Top with sparkling wine or club soda for a fizzy touch.
  • Garnish with fresh raspberries and a slice of peach on the rim of the glass.

  • Non-Alcoholic Version: Replace the sparkling wine with club soda for a refreshing mocktail.
