  • 1 cup fresh pineapple chunks or canned pineapple in juice
  • 1 oz fresh lime juice about 1 lime
  • 1 oz simple syrup adjust to taste
  • 2 oz tequila or rum for a non-alcoholic version, use sparkling water
  • 2-3 sprigs of fresh cilantro plus extra for garnish
  • 4 oz club soda or sparkling water
  • Ice cubes

  • Prepare the Pineapple and Cilantro:
  • If using fresh pineapple, chop it into chunks. In a cocktail shaker, muddle the pineapple chunks and cilantro sprigs together. This releases the flavors of both ingredients.
  • Add the Lime Juice and Simple Syrup:
  • Pour in the fresh lime juice and simple syrup. Muddle a bit more to combine all the flavors.
  • Incorporate the Spirit:
  • Add the tequila (or rum) to the shaker, and fill the shaker with ice cubes. Seal the shaker and shake vigorously for about 15-20 seconds until well chilled.
  • Strain and Serve:
  • Using a fine mesh strainer, strain the mixture into serving glasses filled with ice. Top each glass with club soda or sparkling water for that fizzy finish.
  • Garnish and Enjoy:
  • Garnish each drink with a sprig of cilantro and a slice of lime if desired. Serve immediately and enjoy the refreshing flavors!
