Instructions
Step 1: Prepare the Lemongrass
Cut the Lemongrass: Trim the top and bottom of the lemongrass stalk, then peel away the tough outer layers until you reach the tender white part. Slice it into small pieces to release the flavor.
Step 2: Muddle the Ingredients
Muddle the Pineapple and Lemongrass: In a cocktail shaker, add the fresh pineapple chunks and the sliced lemongrass. Use a muddler to gently press and twist the ingredients together until the pineapple is crushed, and the lemongrass releases its aromatic oils. This step enhances the drink’s flavor.
Step 3: Mix the Cocktail
Add the Liquids: Pour the tequila, fresh lime juice, and agave syrup into the shaker with the muddled mixture.
Add Ice: Fill the shaker with ice cubes, covering the liquid.
Shake It Up: Secure the shaker lid and shake vigorously for about 15 seconds, ensuring everything is well combined and chilled.
Step 4: Strain and Serve
Strain into Glasses: Using a strainer, pour the mixture into two glasses filled with ice. If desired, run a lime wedge around the rim of each glass and dip it into salt or sugar for an extra touch.
Garnish: Add lime wedges and pineapple slices for garnish.
Variations
Spicy Pineapple Lemongrass Margarita: Add a few slices of jalapeño when muddling the pineapple for a spicy kick.
Fruity Twist: Substitute the pineapple with mango or passionfruit for a different flavor profile.
Mocktail Version: Replace tequila with soda water for a refreshing non-alcoholic drink.
