  • 1 oz fresh lime juice about 1 lime
  • 1 oz fresh pineapple juice about 1/2 pineapple
  • 1 oz agave syrup adjust based on sweetness preference
  • 1-2 sprigs fresh rosemary plus extra for garnish
  • Ice cubes
  • Salt for rimming the glass, optional

  • Method
  • Prepare the Glass:
  • If you like a salted rim, rub a lime wedge around the edge of your glass and dip it in salt. Set the glass aside.
  • Muddle the Rosemary:
  • In a cocktail shaker, place 1-2 sprigs of fresh rosemary. Use a muddler (or the back of a spoon) to gently crush the rosemary. This releases the essential oils and infuses the drink with flavor.
  • Combine Ingredients:
  • Add the tequila, fresh lime juice, pineapple juice, and agave syrup to the shaker with the muddled rosemary.
  • Shake It Up:
  • Fill the shaker with ice and secure the lid. Shake vigorously for about 15-20 seconds to chill and mix the ingredients thoroughly.
  • Strain and Serve:
  • If desired, use a strainer to pour the mixture into the prepared glasses filled with ice. Alternatively, you can pour it directly over ice without straining.
  • Garnish:
  • Garnish with a sprig of fresh rosemary and a pineapple wedge or slice on the rim of the glass.
