Method
Prepare the Glass:
If you like a salted rim, rub a lime wedge around the edge of your glass and dip it in salt. Set the glass aside.
Muddle the Rosemary:
In a cocktail shaker, place 1-2 sprigs of fresh rosemary. Use a muddler (or the back of a spoon) to gently crush the rosemary. This releases the essential oils and infuses the drink with flavor.
Combine Ingredients:
Add the tequila, fresh lime juice, pineapple juice, and agave syrup to the shaker with the muddled rosemary.
Shake It Up:
Fill the shaker with ice and secure the lid. Shake vigorously for about 15-20 seconds to chill and mix the ingredients thoroughly.
Strain and Serve:
If desired, use a strainer to pour the mixture into the prepared glasses filled with ice. Alternatively, you can pour it directly over ice without straining.
Garnish:
Garnish with a sprig of fresh rosemary and a pineapple wedge or slice on the rim of the glass.
