Method
Step 1: Make the Simple Syrup
In a small saucepan, combine equal parts water and sugar (1 cup each).
Heat over medium heat, stirring until the sugar completely dissolves.
Remove from heat and let it cool. You can store any leftover syrup in the fridge for future cocktails.
Step 2: Prepare the Cocktail
In a cocktail shaker, add the cucumber slices and jalapeño. Use a muddler to gently press down and release the juices.
Note: The more you muddle, the spicier your cocktail will be!
Add the gin (or vodka), fresh lemon juice, and 1 oz of simple syrup to the shaker.
Fill the shaker with ice and shake vigorously for about 15-20 seconds until well chilled.
Strain the mixture into two tall glasses filled with ice.
Top off each glass with club soda to your liking.
Garnish with additional cucumber slices and jalapeño for a pop of color and flavor.
Serve immediately and enjoy your Spicy Cucumber Collins!
Variations
Herb Infusion: Add a few mint or basil leaves while muddling for a refreshing twist.
Fruit-Infused: Swap out cucumber for watermelon or add berries for a fruity kick.
