  • For the Spicy Cucumber Collins:
  • 4 oz gin or vodka for a different base
  • 1 oz fresh lemon juice
  • 1 oz simple syrup see below for how to make it
  • 4 slices of cucumber plus more for garnish
  • 1-2 slices of jalapeño adjust based on your heat preference
  • Club soda to top off
  • Ice cubes
  • Simple Syrup:
  • 1 cup water
  • 1 cup granulated sugar

  • Step 1: Make the Simple Syrup
  • In a small saucepan, combine equal parts water and sugar (1 cup each).
  • Heat over medium heat, stirring until the sugar completely dissolves.
  • Remove from heat and let it cool. You can store any leftover syrup in the fridge for future cocktails.
  • Step 2: Prepare the Cocktail
  • In a cocktail shaker, add the cucumber slices and jalapeño. Use a muddler to gently press down and release the juices.
  • Note: The more you muddle, the spicier your cocktail will be!
  • Add the gin (or vodka), fresh lemon juice, and 1 oz of simple syrup to the shaker.
  • Fill the shaker with ice and shake vigorously for about 15-20 seconds until well chilled.
  • Strain the mixture into two tall glasses filled with ice.
  • Top off each glass with club soda to your liking.
  • Garnish with additional cucumber slices and jalapeño for a pop of color and flavor.
  • Serve immediately and enjoy your Spicy Cucumber Collins!

  • Herb Infusion: Add a few mint or basil leaves while muddling for a refreshing twist.
  • Fruit-Infused: Swap out cucumber for watermelon or add berries for a fruity kick.
