Course Main Course, Side Dish
Cuisine Italian

Equipment

  • Large pot
  • Mixing bowl
  • Whisk
  • Baking dish (9x13 inch)
  • Oven

Ingredients

  • Ingredients
  • Potatoes: 2 lbs about 4-5 medium potatoes
  • Eggs: 2 large
  • Milk: ½ cup
  • Parmesan cheese: 1 cup grated (can substitute with nutritional yeast for a dairy-free option)
  • Olive oil: 2 tablespoons or melted butter
  • Salt: 1 teaspoon
  • Black pepper: ½ teaspoon
  • Fresh herbs: optional such as parsley or thyme, chopped (1 tablespoon)
  • Onion: 1 small finely chopped (optional)
  • Variations:
  • Add cooked spinach sautéed mushrooms, or cooked sausage for extra flavor.
  • Use sweet potatoes instead of regular potatoes for a different taste and color.
  • Substitute milk with almond or oat milk for a dairy-free version.

Instructions

  • Preheat the Oven
  • Preheat your oven to 375°F (190°C). This ensures your Torta di Patate cooks evenly.
  • Boil the Potatoes
  • Peel and chop the potatoes into quarters. Place them in a large pot and cover with cold water. Add a pinch of salt. Bring to a boil and cook for about 15-20 minutes or until the potatoes are fork-tender.
  • Prepare the Mixture
  • Once the potatoes are cooked, drain them and let them cool slightly. In a mixing bowl, mash the potatoes until smooth. Add the eggs, milk, Parmesan cheese, olive oil, salt, pepper, and any fresh herbs. Mix well until combined.
  • Add Optional Ingredients
  • If using, stir in the chopped onion and any additional fillings like spinach or sausage. This adds extra flavor and makes the dish heartier.
  • Transfer to Baking Dish
  • Grease your baking dish with a bit of olive oil or butter. Pour the potato mixture into the dish, spreading it evenly.
  • Bake
  • Bake in the preheated oven for 30-35 minutes until the top is golden brown and the edges are crispy.
  • Let It Stand
  • Once baked, let the Torta di Patate stand for about 10 minutes before slicing. This helps it hold its shape when served.
  • Serve and Enjoy
  • Cut into squares or wedges and serve warm. Enjoy your Torta di Patate as a main dish or a side!
