Equipment

  • Mixing bowl, frying pan, spatula, measuring cups, and spoons.

Ingredients

  • 2 large potatoes about 1 lb
  • 1 cup of grated cheese like Parmesan or mozzarella
  • 1/2 cup of all-purpose flour or gluten-free flour for a gluten-free option
  • 2 large eggs
  • 1/4 cup of chopped fresh parsley or basil for a different flavor
  • Salt and pepper to taste
  • Olive oil for frying

Instructions

  • Step 1: Prepare the Potatoes
  • Boil the Potatoes: Peel the potatoes and cut them into chunks. Boil them in salted water until tender (about 15-20 minutes). Drain and let them cool slightly.
  • Mash the Potatoes: Once cool enough to handle, mash the potatoes in a large mixing bowl until smooth.
  • Step 2: Mix the Ingredients
  • Add Other Ingredients: To the mashed potatoes, add the grated cheese, flour, eggs, chopped parsley, salt, and pepper. Mix everything until well combined.
  • Step 3: Shape the Tortini
  • Form the Cakes: Using your hands, shape the potato mixture into small cakes or patties (about 2-3 inches in diameter).
  • Step 4: Cook the Tortini
  • Heat the Oil: In a frying pan, heat a generous amount of olive oil over medium heat.
  • Fry the Tortini: Once the oil is hot, add the potato cakes in batches, making sure not to overcrowd the pan. Fry for about 4-5 minutes on each side, or until they are golden brown and crispy.
  • Drain the Excess Oil: Remove the cooked tortini from the pan and place them on a paper towel to absorb any excess oil.
  • Step 5: Serve
  • Enjoy: Serve warm, garnished with extra parsley or cheese if desired. Tortini di Patate can be enjoyed alone or with a side of marinara sauce for dipping.
