  • Club soda: To top off

  • Prepare the Watermelon: Start by cutting the watermelon into cubes. For a smoother drink, you can blend the watermelon to make a puree, or you can muddle the cubes directly in the glass.
  • Muddle the Mint: In a cocktail shaker, add the mint leaves and lime juice. Use a muddler to gently crush the mint leaves to release their oils. Be careful not to tear them too much; just a gentle press will do.
  • Combine Ingredients: If you blended the watermelon, add the watermelon puree to the shaker. If you're using muddled cubes, add them to the shaker along with the simple syrup and rum.
  • Shake it Up: Fill the shaker with ice and shake vigorously for about 15-20 seconds. This helps to chill the mixture and blend the flavors.
  • Strain: If you used a blender, strain the mixture into a glass filled with ice. If you muddled the watermelon, you can pour everything into the glass without straining.
  • Top with Club Soda: Add a splash of club soda to the glass to give your cocktail a little fizz. Adjust the amount based on your taste.
  • Garnish: Add a few mint leaves on top for garnish and, if desired, a slice of watermelon on the rim of the glass.
