- 2 cups frozen or fresh green peas
- 1 medium onion diced
- 2 cloves garlic minced
- 1 medium potato peeled and diced
- 4 cups vegetable or chicken broth
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh herbs like parsley or mint for garnish
Sauté the Aromatics:
In a large pot, heat the olive oil over medium heat.
Add the diced onion and sauté until translucent, about 5 minutes.
Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.
Cook the Vegetables:
Add the diced potato to the pot and stir well. Cook for about 3-4 minutes.
Pour in the broth and bring the mixture to a boil.
Add the Peas:
Once boiling, add the peas. Reduce the heat and let the soup simmer for about 15 minutes, or until the potatoes are tender.
Blend the Soup:
